The Ultimate Keto Chocolate Chip Cookie Recipe is not only easy to make, but also a great way to satisfy that sweet tooth while staying in ketosis. This recipe uses coconut flour instead of wheat flour and has no sugar added- perfect for anyone with diabetes or following a low carb diet. With just 2g of net carbs per serving, these cookies are sure to be your new favorite dessert!

Medium Recipe:

– ½ cup Kerrygold Butter, melted

– ¼ cup unsweetened cocoa powder

– ¾ tsp vanilla extract

– ⅔ cups coconut flour (you can substitute with almond flour as well)

– ⅓ cups Lakanto Monkfruit Sweetener or sugar of choice*

This recipe requires a few common ingredients, most of which you likely already have in your kitchen. The only thing needed that might not be on hand is Truvia- an erythritol and stevia blend to sweeten the cookies without adding carbs or sugar. If you prefer another type of artificial sweetener feel free to use it instead!

The first step is making the dough by blending together cream cheese with sour cream (or plain Greek yogurt) until smooth. Add in eggs one at a time, mixing well after each addition before moving onto the next egg. Finally add coconut flour, baking powder, salt, vanilla extract and truvia/sweetener into the batter mixture and mix well. Set aside for about ten minutes to allow the dough to firm up.

Fold in chocolate chips and walnuts if desired, then scoop a spoonful of batter onto parchment paper or silicone baking mat lined cookie sheet. Repeat until all of the batter has been used.

Bake for about 15-17 minutes (or 20-22 minutes if using dark cocoa powder), rotating halfway through cooking time so they cook evenly on both sides.

Allow cookies to cool completely before removing from tray and serving.
